Second “Pop-Up Paladares” Cooking Series Featuring Cuban Chef  Alain Rivera Santana

Cuba Libre Restaurant & Rum Bar is pleased to announce the second series of dates for its “Pop-Up Paladares” cooking series.  Chef-Partner Guillermo Pernot has invited Cuban chefs he befriended during his culinary exploration trips to Cuba. The guest chefs collaborate with him to create a four-course prix fixe menu during their visit.  Two seating options are available, one at 6 PM and another at 8:30 PM.   Each of the six featured dinners is priced at $45 per person (beverages, tax and gratuity not included), and is reserved for 40 guests in the Cuba Libre’s private event space, La Galería.  The striking décor allows guests to travel to the forbidden island, making it a unique backdrop for unforgettable evening.

On June 12-14, 2012, Chef Pernot will co-host the second “Pop-Up Paladar” with Chef Alain Rivera Santana of Doctor Café.  Located in the residential neighborhood of Miramar, this ‘hidden gem’ is best known for its use of charcoals, which gives the dishes its unique flavor.  The four-course menu, a collaborative creative effort of the two chefs, will feature Merluza al Escabéche, fresh cod in vinegar-chile sauce withlamb tongue and beet salad;Canelones de Cangrejo; fresh corn pasta cannelloni withsweet crabmeat enchilado filling;Atún, grilled yellow fin tuna, Malta honey reduction with ruby red grapefruit and lavender supremes;Sopa de Mango, chilled mango soup, with Cuba Libre’s five-year-old rum ice cream.  For the perfect ending, guests will receive petit fours as a special take home.

This April, Chef Pernot led a group of 16 travelers on a cultural tour of Havana. Working with Insight Cuba, the leading provider of authorized people-to-people travel to Cuba for U.S. citizens, Chef Pernot, accompanied by his Cuban-born wife Lucia, whose relative was Cuba’s 3rd president, together hosted the trip. The trip filled so quickly that a second trip is on the horizon and slated for November 2012.
