The rare Black Truffle will be celebrated at Via Umbria’s Black Truffle Dinner with Simone Proietti Pesci and Liam LaCivita. Simone Proietti Pesci is chef-owner of Bevagna, Italy’s renowned restaurant le Delizie del Borgo. Along with Chef Liam, Chef Pesci will prepare for guests a four course meal featuring black truffles. The menu includes Taglierini pasta with black truffle, parsnip butter and Parimigiano and pan crisped veal roast involitini with black truffle zabaglione and mostarda. Guests have the option of adding a wine pairing for $25 or buying a bottle from the Enoteca shop in Via Umbria and corkage fees will be waived. Dinner starts at 7pm. Primo: Taglierini with black truffle, parsnip butter and Parmigiano
Secondo: Pan crisped veal roast involtini with black truffle zabaglione and mostarda
